Bruschetta Chicken

I have been trying to cook dinners with less carbs and more vegetables, which sounds easy, but it proves hard after a week or so.  When I saw this recipe from Pioneer Woman for bruschetta chicken, I thought it would be perfect, and it turned out delicious!  I almost forgot I didn't have pasta or potatoes...almost.
In a small skillet heat olive oil over medium heat.  Add garlic and stir for a minute, remove from heat before garlic gets brown.  Pour into a separate bowl and allow to cool.
Add tomatoes, basil, balsamic, salt and pepper to the bowl of garlic. Toss to combine, adding any ingredients you'd like more of.  Cover and refrigerate until the chicken is ready.
Cut one chicken breast in half to create two thin pieces. I cooked the chicken in the pan leftover from the garlic, you can also grill it.  Either way it'll work!
At the last minute I found an avocado and thought it would be a good addition on top of the chicken, so I smashed it up and added some salt and pepper.
I served with avocado on top of the chicken, topped with the brushetta mix.  I also served with some lettuce, and it turned out to be a great salad! This was so delicious, jam packed with flavor!  Even better is the leftovers can be made into something different and equally as great..post for that next week to stay tuned.

Bruschetta Chicken
Serves 2
Adapted from Pioneer Woman

1 tablespoon olive oil
3 cloves garlic
1/2 pint red grape tomatoes, cut in half
1/2 pink yellow grape tomatoes, cut int half
1/2 tablespoon balsamic vinegar
8 whole basil leaves
salt and pepper to taste
1 chicken breast, cut in half length wise
